How can this be done which files need saving and which can be deleted and replaced or overwritten?

you can download the safemode package overwrite all of the old files and then just run the upgrader.php file...

replace the sources, and these files...

- top.php
- bottom.php
- SSI.php
- index.php
- Reminder.php
- Printpage.php
- english.lng

don't replace you settings.php though.
