Is there a way to create sub-forums? (a forum in a forum)  Sorry if this has been asked before, but searched and couldn't find it.

Currently - no. But a future rewrite of the code (and changes to the database structure) might make this possible. Perhaps YaBB SE 2 / YaBB 2...

Or you could make a new catagory and but the forums inside of that.
